Veg Haleem Recipe Hyderabadi (Eid Special) - How to make Vegetarian Haleem with OATS, SOYA, DALIA at home


Veg Haleem recipe Hyderabadi with oats, soya and dalia is a most popular and authentic recipe of hyderabad and has become world famous. This haleem aka Harees is prepared world wide during the month of Ramzan festival in all the muslim house holds. Usually haleem is prepared with mutton or chicken being the key ingredient. 



But for vegetarians veg haleem has been introduced. Mutton Haleem and Chicken Haleem mandis (that is big stoves made of clay mud will be seen in every corner of a street in hyderabad during the month of ramzan) and will be cooked and served in large quantities.

Haleem is a very healthy recipe as lot of nutritional ingredients go into its making.


In Vegetarian Haleem we add Soya which is rich in protien, Dalia and Oats which are rich in fibre, vegetables like carrot, peas and beans which are highly nutritious. I have replaced regular ghee with cow ghee to make haleem even more healthier.

Soya in veg haleem gives the feel of mutton or chicken chunks for vegetarians. A dash of lime at the end makes it even more flavourful. Always serve the haleem when it is piping hot. It will be just like any other healthy and nutritious porridge. Let us learn how to make vegetarian haleem at home.


Ingredients for Veg Haleem recipe Hyderabadi with oats, soya and dalia:


1. Soya Chunks - 1 cup (I have boiled these, squeezed excess water, chopped to fine pieces)
2. Green Chillies - 3 (vertically slit)
3. Ginger Garlic Paste - 1/2 tsp
4. Mint Leaves - 1/2 cup
5. Coriander Leaves - 1/2 cup
6. Carrots - 1/2 cup (You can add green peas and french beans 1/4 cup each as well)
7. Salt - To Taste
8. Turmeric Powder - 1/4 tsp
9. Milk - 1/2 cup
10. Curd - 2 tbsps
11. Water - 3 cups
12. Lemon Juice - 1/2 lemon or 2 tsps
13. Ghee - 3 to 4 tbsps

To dry roast:

1. Pepper corns - 1/2 tsp
2. Shah Jeera - 1/2 tsp
3. Cloves - 4
4. Cardamom - 2
5. Star Anise - 1
6. Cinnamon Stick - 1
7. Dalia (Broken Wheat) - 1/2 cup
8. Oats - 2 tsps
9. Toor Dal (Red Gram) - 1 tsp 
10. Channa Dal (Bengal Gram)- 1 tsp
11. Urad Dal (Black Gram)- 1 tsp
12. Moong Dal (Green Gram) - 1 tsp
13. Sesame Seeds - 1 tsp
14. Almonds - 5
15. Fried Onions - 1 large 

For Garnishing:

1. Fried Onions - 1 large 
2. Mint Leaves - few
3. Coriander Leaves - few
4. Lemon wedges - 2 to 3
5. Fried Cashews - few
6. Ghee - 1 tsp
7. Dried Rose Petals - few




Instructions:

How to make Vegetarian Haleem at home:

1. Wash and soak soya chunks in hot water for about 5 minutes
2. Now squeeze off the water and chop them to fine pieces, keep aside




3. In a pan, dry roast all the ingredients under the list "To dry roast"




4. First add all the spices and roast for 2 minutes



5. Now add dals, oats, dalia, fried onions and roast them



6. Once these ingredients are nicely roasted then switch off the flame, allow them to cool and grind them to a fine powder, keep aside




7. Now heat a pressure pan, add ghee once the ghee becomes hot add green chillies and ginger garlic paste



8. Once these are sauteed, add carrots and any other veggies if you are using



9. Toss them for 2 minutes, now add chopped soya pieces, fry for a minute
10. Now add mint and coriander leaves, fry for a minute, also add turmeric powder
11. Now add curd and mix well

12. Now add the ground powder to this and mix nicely



13. Add 2 cups of water, mix nicely to remove lumps and put the lid on



14. Pressure cook for 2 whistles, after the pressure is completely released, remove the lid and switch on the flame




15. Now add one more cup of water, salt and mix nicely
16. Now add milk and mix nicely, also mash the whole stuff using a potato masher to a fine paste




17. Now add lemon juice, a spoonful of ghee and mix nicely




18. Our yummy and authentic Veg Haleem recipe Hyderabadi with oats, soya and dalia is ready, garnish it with fried onion, fried cashews, mint and coriander leaves, lemon wedges and a spoonful of ghee
19. Do prepare this Vegetarian Haleem at home and serve this while it is hot and fuming. This is a very healthy recipe which looks like a porridge.
