Raju Gari Kodi Pulao - How to make Raju Gari Kodi Pulao andhra style at home

Raju Gari Kodi Pulao andhra style by name goes something like King's Special Chicken Pulao. This recipe has become most trending now-a-days in hyderabadi cuisine. This recipe i.e. Raju gari Kodi Pulao is originated from bhimavaram district which comes under coastal andhra region. Unlike regular chicken pulao recipes this Raju gari kodi pulao recipe will be a bit more spicier.

This Pulao will be very spicy and the spiciness comes from the green chillies we use. Garam masala powder adds some more spiciness. I used some red chilli powder as well.

But if you want to skip chilli powder then you can make the whole recipe using hot and spicy green chillies only.

We add green chilli, mint and coriander leaves paste, which along with spiciness also gives an appealing light greenish colour which makes you go much crazy about the pulao. 

Since the recipe is already spicy I served it with plain raita. If you can handle much spiciness then you can accomply your raju gari kodi pulao recipe with Mirchi Ka Salan also. Now let us learn how to make Raju Gari Kodi Pulao andhra style at home.

Ingredients to make Raju Gari Kodi Pulao:

1. Chicken - 500 gms
2. Basmati Rice - 400 gms (I used India Gate Basmati rice variety, you can use any basmati rice or you can use regular rice as well)
3. Boiled Eggs - 2
4. Onions - 250 gms
5. Green chillies - 6 (My chillies were very spicy, if your chillies are normal spicy then increase chillies to 8 instead of 6)
6. Mint Leaves - 1/2 Cup
7. Coriander Leaves - 1/2 Cup
8. Curry Leaves -  2 Sprigs
9. Ginger Garlic Paste - 1 1/2 tsp
10. Oil -  4 tsps
11. Ghee - 4 tsps (You can prepare the whole recipe in ghee as well, in that case skip oil and add ghee approx 8 tsps)
12. Curd  - 1 cup
13. Turmeric Powder - 1/4 tsp
14. Red chilli powder - 2 tsp
15. Salt - To taste
16. Garam Masala Powder - 1 tsp
17. Water - 800 ml (Double the quantity of rice)

Whole garam masalas:

18. Bay Leaves - 2
19. Cardamom - 2
20. Cinnamon - 1 inch stick
21. Cloves - 2
22. Cumin Seeds - 1/2 tsp
23. Black Cumin seeds - 1/2 tsp

For Garnishing:

1. Mint Leaves - Few 
2. Coriander Leaves - Few 
3. Lemon wedges - 2 
4. Onion rings - 3 to 4
5. Fried Cashews - 5 to 6


How to make Raju Gari Kodi Pulao andhra style at home:

1. Wash and soak rice in water for about 1/2 hour

2. Boil eggs nicely, peel the outer shell and keep aside

3. In a mixer jar, add green chillies, mint and coriander leaves and grind to a thick paste, do not add water while grinding, set this aside

4. Heat a pressure pan, add ghee and oil and allow it to heat (You can prepare the whole recipe in ghee as well, in that case skip oil and add ghee approx 8 tsps)

5. Now when oil becomes hot add whole garam masalas as mentioned in the ingredients list

6. Saute the spices for a minute, now add ginger garlic paste, curry leaves, onion pieces

7. Fry till onion pieces turn transparant, add turmeric powder, ground green chilli, mint and coriander paste

8. Fry for a minute, now add washed chicken and fry till chicken turns pale and white

9. Now add curd, salt, red chilli powder, garam masala powder and mix nicely, cover and cook for 5 minutes 

10. Now add rice which was soaked for 1/2 hour, drain water used for soaking, fry for a minute

11. Now add water, mint and coriander leaves, mix nicely, close the lid of the pressure cooker and cook this for about 2 whistles

12. Meanwhile heat a spoonful of oil, add boiled and peeled eggs, also sprinkle a pinch of salt, turmeric and red chilli powders on the eggs and fry till a nice crusty roasted coating appears on both the eggs

13. Also fry cashews, set aside

14. Now when 2 whistles have come, switch off the flame and wait till the pressure is released from the pressure cooker

15. Our rice and chicken are nicely cooked, dish it out onto a serving plate, garnish it with mint and coriander leaves, lemon wedges, onion swirls and fried cashews. 

16. Yummy Raju gari Kodi Pulao is ready. Serve it with roasted eggs and raita.
