Hyderabadi bagara baingan recipe - vankaya masala - bharwa baingan

Hyderabadi Bagara Baingan or Bharwa baingan aka Vankaya Masala is a popular hyderabadi veg delicacy rich in flavours and yumminess. This recipe is most popular down south in the andhra region by name Gutti Vankaya Kura or Vankaya Masala. This recipe is nothing but Stuffed Brinjals in Peanut Gravy

Hyderabadi Bagara Baingan - Bharwa Baingan

Gravy for this Bagara Baingan can be made in many variations. For example peanut gravy as I have shown now, sesame gravy, poppy seeds gravy or coconut gravy either freshly grated coconut or the dry coconut powder both variations taste heavenly.

Here I am showing with peanuts and also a mild hint of sesame and dry coconut powder can be seen. You can add some cashews as well.

Nicely cooked brinjals in thick and creamy peanut gravy when served with Rasam or Sambar along with Steamed Rice is an awesome combination. This can be also served with flavoured rice varieties or with flat breads such as rotis, phulkas and puris as well. Round, small and young brinjals are specially chosen to make this Masala Vankaya recipe.

This Vankaya Masala recipe is one of my hubby's favourite brinjal recipes. Now let us proceed to make the authentic rich and yummy Hyderabadi Bagara Baingan aka Stuffed Brinjal in Peanut Gravy.

Ingredients for making Hyderabadi bagara baingan recipe:

1. Brinjals - 250gms (Round, small and young ones are preferred)
2. Peanuts - 3 tbsps
3. Sesame Seeds - 1/2 tbsp
4. Dry Coconut Powder - 1/2 tbsp
5. Green Chillies - 4
6. Onion - 1 Large
7. Curry Leaves - few
8. Coriander Leaves - 4 to 5 sprigs
9. Mint Leaves - few
10. Tamarind - 1 small gooseberry sized
11. Garlic Pods - 4 to 5
12. Red Chilli Powder - 3 tsps
13. Salt - To Taste
14. Turmeric Powder - 1 tsp
15. Coriander Powder - 1 tsp
16. Hing - 1/2 tsp
17. Mustard Seeds - 1 tsp
18. Cumin Seeds - 1 tsp
19. Oil - 4 to 5 tbsps
20. Water - As needed

Bharwa Baingan - Vankaya Masala


How to make Hyderabadi bagara baingan recipe or Bharwa Baingan (Gutti Vankaya Kura):

1. Soak tamarind in some water for 5 minutes

2. Dry roast peanuts, when you see the skin of peanuts is opening, then add sesame seeds and fry for a minute

3. Switch off and cool this stuff completely
4. In a mixie jar, put the roasted peanuts, sesame seeds, dry coconut powder, soaked 
tamarind, garlic pods, and these powders as needed i.e. red chilli powder, salt and 
coriander powder and grind coarsely

5. Add little water if needed, it should form a thick paste
6. Now cut brinjals by making a plus shaped mark on them as shown in pic and stuff them with the ground paste, keep remaining paste aside

7. Heat oil in a pan, when oil is hot add mustard and cumin seeds
8. Once they splutter add onion and green chilli pieces

9. Also add curry leaves and mint leaves, turmeric powder and hing
10. Add in stuffed brinjals cover with lid and cook on simmer flame for 2 to 3 minutes, meanwhile keep rotating the brinjals so that they get cooked evenly on all the sides

11. When brinjals get cooked nicely on all sides, add remaining paste, some water as 
needed, salt, red chilli powder, coriander powder and mix nicely

12. Cover with lid and cook for 5 more minutes till oil floats on top
13. Switch off and garnish with coriander leaves

Vankaya Masala - Gutti Vankaya Kura

1. This recipe tastes good when a good amount of oil is added
2. Add less water to form gravy, because water reduces the taste of the recipe
3. Instead of putting just a lid, you can cover the pan with a thick plate containing water as the lid
4. This water gets heated up while cooking and creates some moisture inside the pan 
which helps the brinjals to get cooked properly and also forms the gravy needed.
