Aakakarakaya fry or boda kakarakaya kura andhra style is one of my favourite curry. Aa kakarakaya koora is called as Teasel gourd or Hedgehog or spiny gourd in english, kantola in hindi, kakrol in bengali, kankoda in gujrati and boda kakarakaya in telugu. These are nothing but the miniatures of kakarakaya i.e. bitter gourd, but are not bitter in taste.

In my childhood I would run away on seeing this curry. My mother used to push this curry into my mouth and I used to cry. But after growing up I started liking it slowly and now I wait for winter season to relish this recipe. As teasel gourd is a seasonal vegetable and is widely available only during winters. For vegetarians this Akakarakaya vegetable is like non veg ☺whenever guests pop up they prepare this curry as a honour. 

Coming to the health benefits of teasel gourd, it is rich in anti oxidants which play a pivotal role in reducing the risk of cancer,

helps in reducing diabetis, also rubs off kidney stones and improves eye sight. I added peanut powder to give a nice crunchy and yummy taste to the recipe, you can add sesame powder or dry coconut powder too. Aakakarakaya tastes better with rice an rotis.

Ingredients for aakakarakaya fry or boda kakarakaya kura


(Serves - 2 to 3)

1. Aakakarakaya (Teasel gourd or spiny gourd) - 250 gms
2. Onions - 1 big
3. Curry Leaves - 2 sprigs
4. Mustard Seeds - 1/2 tsp
5. Cumin Seeds - 1/2 tsp
6. Salt - To Taste
7. Turmeric Powder - 1/4 tsp
8. Red Chilli Powder - 2 tsps
9. Coriander Powder - 1 tsp
10. Peanuts - 1 tbsp (If using Sesame seeds then add 1 tbsp)
11. Sugar - 2 tsps
12. oil - 3 to 4 tsps

Procedure:

How to make aa kakarakaya curry andhra style


1. Wash and remove edges of spiny gourds and cut them to small pieces

2. If you don't like the seeds inside spiny gourds then you can discard them, also if seeds turn pink i.e. if they get ripen then discard those seeds



3. I discarded the ripen seeds but some people like to cook the ripen seeds too, it is upto your wish

4. Spiny gourds take a bit longer time to get fried, if you want to cook them in lesser time then parboil spiny gourd pieces for 5 minutes or so and then you can cook them in oil. I didn't parboil the spiny gourds

5. Heat a pan and dry roast the peanuts when they are roasted nicely, shift them to a mixer and cool the peanuts

6. When they are cooled down grind them to a fine powder and keep aside, if using sesame seeds then dry roast them and grind to a fine powder 

7. In the same pan add oil and when oil is hot add mustard and cumin seeds

8. Once they splutter, add onion pieces and curry leaves



9. When onion pieces turn transparant, add turmeric powder and chopped spiny gourd pieces

10. I added salt immediately after adding spiny gourd pieces so that they get cooked a bit more quickly

11. Mix nicely cover with a lid and cook on a medium or low flame till pieces become soft

12. It takes for about 15 minutes or so to get cooked nicely, keep stirring in between otherwise the pieces get burnt

13. Now when the pieces are nicely cooked add red chilli powder, coriander powder, sugar and cook for 2 more minutes

14. Now add ground peanut powder and mix nicely, the original and traditional recipe of cooking spiny gourd curry calls for adding sesame seeds powder but since I was in short of sesame seeds I added peanuts powder to cut down the bitterness

15. Now after 2 minutes of cooking switch off the flame and serve spiny gourd curry with steamed rice or rotis.
