Pudhina Tomato / Mint leaves and tomato Chutney



Mint and Tomato Chutney aka Pudhina Tomato pachadi is a best combination for dosa, idli and uthappam. You can serve this chutney with rice as well. I love steamed rice, mudha pappu and this chutney a lot. I usually make this chutney for pesaratlu. Pudhina is good for digestion as it is a good soothing agent for stomach. Also mint leaves give a nice and refreshing feel. 



This chutney can be served with upma and rotis as well. This is a balanced combo of mint leaves and tomatoes. But if you want the chutney to be much tangy then you can increase the quantity of tomatoes. Also you can add little tamarind for tanginess. And if you want much of the mint flavour then you can increase the leaves quantity.

Ingredients:

1. Mint Leaves(Pudhina) - 2 small bunches
2. Dry Red Chillies - 3
3. Coriander Seeds - 1 tsp
4. Garlic Pearls - 3 to 4
5. Tomatoes - 3 to 4 (if small in size)
6. Turmeric Powder - 1 tsp
7. Salt - As per taste
8. Mustard Seeds - 1 tsp
9. Cumin Seeds - 1 tsp
10. Curry Leaves - 10 leaves
11. Oil - 6 tsps



Procedure:

1. In a small pan, heat 2 tsps of oil, when oil becomes hot add dry red chillies, coriander seeds, cumin seeds, garlic pods, mint leaves and fry for 2 minutes till leaves shrink
2. Now when the leaves are properly cooked, dishout the stuff into a mixie jar and cool the stuff


3. Now in the same pan add 2 more tsps of oil and when oil becomes hot add chopped tomatoes, turmeric powder, salt as needed and cook for about 5 to 6 minutes till tomatoes turn mushy
4. When tomatoes are properly dishout the tomato stuff into a plate and cool down the stuff completely


5. Now add this cooled tomato stuff to the mixie jar which has cooked mint leaves
6. Now grind both together by adding salt as needed and little water to a fine and thick paste


7. Now take this ground chutney to a bowl
8. Now heat 2 tsps of oil again in the same pan and when oil becomes hot add mustard seeds, cumin seeds and curry leaves
9. Once these ingredients start crackling, switch off the flame and add this to the chutney bowl along with the oil
10. Yummy Pudhina tomato chutney is ready to serve with idli, dosa, vada or rice.
